Wine tasting is not only elaborate but it requires exercising proper judgment with the help of the senses including those of smell and sight as well as taste playing a very important part. There are a thousand and one varieties, or type of wines depending on the vineyard where they were grown as well as the type of grapes they are made of.  It takes experience and a real romance with wine to be able to distinguish its characteristics just by smelling and tasting.   Basically, wines that have been stored properly should taste smooth.  Wines that taste off or stale are either not of good quality or they were stored improperly and their corks tainted.

Next, it is important that the wine taster exercises their sense of smell as this is an important aspect to proper wine tasting. The fragrance of a wine lets the wine taster understand a particular wine’s exact nuance and what’s more, it involves being able to distinguish from a slew of scents. The scent in turn depends on the grapes that were used, the wine making process involved and the kind of storage conditions in which the bottles were kept.

If wines are generally red or white, then why do we have to study their colors?  White wines are actually not perfectly white because their color ranges from yellow to brown and green.  White wines with darker colors have more flavor and are older.  While aging improves the flavor of red wines, this doesn’t hold true for white wines which may go bad with time.  Red wines that are lighter in color are older.  You will be able to examine a red wine’s age by tilting a glass with red wine, allowing some to settle on the glass rim, and examining its color.  When the color of the wine that settles on the glass rim is brownish, then it has been aged.

The serving temperature of wine is the subject of this part of our wine 101 guide…

The serving temperature of wine is important, so it’s worthwhile teaching yourself the basic principles. The common saying that red wines at room temperature and white wines chilled is a useful place to start, but there’s more to it than that.

Your home refrigerator maintains a temperature of around 3 degrees, which is far too cold for most white wines. Champagne and dry white wines of a high quality are best served at a temperature between 7 degrees and 11 degress (sometimes even a little higher), which is very near to the temperature in many underground cellars for much of the year. Placing white wine in the refrigerator for an hour prior to serving it will allow it to reach the right temperature, though it can be served straightaway if it’s been stored in a cellar. Inexpensive white wines, cheaper sparkling wines and sweet white wines should be a little colder, maybe 3 degrees to 9 degrees, so two hours or so should reduce these bottles down to an ideal temperature.

As with white wines, red wines also need to be chilled. The ‘room temperature’ which many see as the ideal serving temperature for red wines doesn’t apply in the warmth of today’s insulated, centrally heated houses. The optimal serving temperature for most fine red wines is maybe 14 degrees to 17 degrees, considerably cooler than modern houses, although this was a common temperature indoors in centuries gone by. Therefore, many red wines, unless stored somewhere cool, will benefit from half an hour in the refrigerator.

When correcting the temperature of wine, you need to take care not to damage it. Gentle cooling in the fridge is best, with cooling in a bucket of water and ice also being a good option. It will have the effect of bringing the wine down to 0 degrees, which is far too cold to really appreciate the wine, so you’ll need to remove the bottle before it gets this far. If trying to warm a bottle which is too cold, there is a more significant risk of damaging the wine. Warm the wine gently, ideally by planning forward and bringing the wine from its cool storage area (whether it be a fridge or a cellar) some hours in advance. Some people are tempted to try and quicken the process by placing the wine near radiators or other sources of heat; this will damage the wine.

If you’re not sure about the serving temperature, it’s best to opt for colder rather than warmer. Wines served in this way will soon warm up in the glass.
